Abstract
Changes in consumer perception, expectations and acceptance of processed foods have brought changes in the way many further-processed meat products are labeled, marketed and processed. This discussion will address the drivers of these changes and the science (or lack thereof) behind them, as well as relevant current regulations and technological innovations that address them.
