Abstract
When authorities are unable to identify the origin of the tainted product, food
recalls are often applied to all suppliers, including to products not linked to the
contamination. One role of traceability is to identify more speci cally the origin
of a product, enabling more targeted recalls. In this paper, we show how increased
traceability contributes to protect the reputation of rms by potentially limiting
the size of product recalls. Furthermore, we show the relationship between the
optimal degree of traceability and the pro t maximizing level of food safety for a
competitive industry and for industry collective organization.
