About Ruth E. Litchfield

Ruth Litchfield received her bachelor's degree in dietetics from the University of Northern Iowa, masters in food and nutrition from Kansas State University, and her PhD in nutrition from Iowa State University. In 2002 she joined the FSHN faculty as an assistant professor and in 2009 she became an associate professor. Litchfield's academic appointment has been 25% teaching and 75% research and extension with the Families Extension program. Litchfield's background is in community health and nutrition as a practitioner, educator, and researcher. She uses comprehensive, community-based research approaches to combat the childhood obesity epidemic.
