Dr. Bob Delmore is a Professor of Animal Science at Cal Poly State University, San
Luis Obispo. In addition to teaching courses in meat science, safety and processing, Bob
oversees the University processing facilities and advises undergraduate and graduate
students. Dr. Delmore’s current research area includes examining impact of growth
intervention technologies on growth, carcass characteristics and palatability attributes
in Calf-fed Holstein Steers and factors that influence carcass value and meat quality. 

Bob works closely with the meat industry serving as Chairman of the National Meat
Association Education Committee; Member of the National Pork Board Pork Safety Committee;
and has served on the Board of Directors for the American Meat Science Association. 

Dr. Delmore has received national recognition including Meat Processing Magazines Rising
Star Distinction in March 2000, the American Meat Science Association Achievement Award
in June 2007, and in 2009 was recognized by Meatingplace Magazine as one of nine
up-and-coming industry leaders to watch over the next 20 years. 

Dr. Delmore was formerly the Vice President of Technical Services at Clougherty Packing
Company (Farmer John). Bob was responsible for all aspects of Food Safety, Hazard
Analysis and Critical Control Point (HACCP) systems, USDA-FSIS Regulatory Compliance,
Quality Management, Chemistry and Microbiology Laboratories, Product Specifications,
Research and Development, Customer Specification and Audit requirements and Animal
Welfare and Handling. 

Dr. Delmore received a Bachelor of Science degree from Cal Poly San Luis Obispo (1991) in
Food Science, earned a Masters Degree from the University of Nebraska-Lincoln (1993) and
received a Ph.D. from Colorado State University (1998). 

Bob and his wife Dr. Lynn Graves Delmore, also a well-regarded meat scientist, live in
Atascadero, CA with their two daughters Ainsley and Tessa.
