Heath completed a PhD at the School of Environmental and Life Sciences, University of Newcastle, in 2003. He subsequently worked as a Post-doctoral Fellow at the Institut National de la Recherche Agronomique (INRA), Tours-Nouzilly, France, and in the School of Chemistry and Physics, University of Adelaide, prior to joining the University of Wollongong in 2009.
